Recipe of The Month: Peach, Tomato and Mozzarella salad
I have to hold my hands up and say that I have definitely been guilty many times of eating the same lunch over and over (I maintain that I have a very serious pastry deficiency and definitely need that sausage roll). This is a great one for when you’re feeling stuck in a lunchtime rut and want to change things up or for when they start asking if you want the ‘usual’ at your local bakery: a beautiful mix of savoury and sweet with the amazing aroma of basil and a hit of protein from the mozzarella to keep you going and avoid the afternoon slump.
Ingredients
1 tsp olive oil
2 medium peaches, quartered
2 tsp Balsamic Vinegar
2 tsp extra virgin olive oil
1 tsp clear honey
½ tsp tomato purée
Bunch of basil, ripped up
Cherry Tomatoes
Ball of mozzarella, shredded into pieces
1 tbsp pine nuts, lightly toasted
2 slices sourdough, toasted
Method
Heat a nonstick griddle pan over a medium heat and brush with the olive oil
Put the peach quarters cut-side down in the pan and griddle for 2-3 mins on each side
Turn off the heat and cover with foil to keep warm
Next, make the dressing. Mix the balsamic, extra virgin olive oil, honey, tomato purée in a small bowl, along with 1 tsp water, then season to taste
On a serving plate, arrange the basil, peaches, tomatoes and mozzarella
Drizzle over the dressing and sprinkle with the toasted nuts. Season to taste, then serve with the toasted sourdough
